Starting prices are informational. Your design and equipment selections determine the final cost.

From overnight cook to event service

Pitmasters selling plates need a carving and assembly rhythm; off-site caterers may need pan storage, insulated carriers, and room to stage complete orders. Define whether smoking happens on the trailer or at a separate approved location. Moving cooked product between sites creates different handling and storage needs from cooking each order at the window.

Room for smokers, prep, and load-out

Compare 20- to 24-foot layout concepts for a smoker-focused trailer or an enclosed prep-and-holding kitchen. The right length depends on smoker dimensions and weight, pan movement, fuel storage, and service access. Plan loading and maintenance access alongside the cooking line.

Choose the batch-service equipment

Discuss the actual batch sizes and how long food must remain in service.

  • Smoker or grill placement and its heat, exhaust and fuel needs
  • Holding cabinets and warming equipment for staged service
  • Refrigeration for raw product and prepared sides
  • Carving/portioning tables, pan storage and catering pack-out space

Heat, smoke and workflow

Separate raw-product preparation, cooked-food handling, and dirty-pan return. Smoker exhaust and solid-fuel handling need specific design and local review; an open-air concept does not automatically eliminate ventilation or fire requirements. Plan electrical demand for holding and refrigeration, hot water for cleanup, and access to fuel without blocking service.

What shapes the quote

Smokers, holding capacity, prep space, ventilation, and catering storage each shape the build. A trailer for full cook-and-hold service needs a different plan from one supporting event delivery.

BBQ & Catering Trailers: common questions

Can I bring my own smoker?

Bring its dimensions, loaded weight, fuel type, clearances, exhaust information, and mounting requirements. Our team can review placement, transport, and service access as part of your trailer layout.

Do I need a longer trailer for catering?

Volume, pan handling, storage, and load-out matter more than the category name. Describe your largest event and the work done at a separate kitchen so the team can assess the footprint.

Can the serving window handle plates and catering pickup?

Plan separate staging or pickup routines where possible. Large boxed orders can interrupt individual plate service; the layout should reflect the actual service mix.
